This man is identified as François Poulet. He was one of the attendants of Vincent van Gogh during his stay - 1889-1890 - in the mental institution at the monastery Saint-Paul-de-Mausole near Saint-Rémy-de-Provence. (source: De Gruyter 1953, pages 32, 34, 100). Poulet died in 1954 at Saint-Paul (source: Bailey 2018, page 65).
